what does the ± mean here?

It probably meant either "standard deviation" or "standard error". However, this is an encyclopedia entry, not a scientific article, so was not necessary. I deleted these symbols and cleaned up the table a bit. One could even argue that a table of binding affinities is too much in the weeds for an encyclopedia article.
